MEC Race Series, Recipes and Good Riddance to January

This morning I had my first race in the series of five this year put on by Mountain Equipment Coop.  It was supposed to be a 10k race, that was what I had registered for.  However, the flu, lack of sleep due to my babies having the flu and the icy trail conditions led to a 5k.  I had all intentions this morning of still doing the 10k but when I got 4k in, I knew I was quickly running out of steam.  It was a 5k loop that was to be repeated and when I saw the finish line at the first 5k I knew I was crossing it.

Normally when I have to cut a run or a workout short I feel like I have let myself down and I am disappointed in myself.  Not today.  Sometimes you just have to listen to your body.  I knew I still had a 45 minute strength workout to complete when I got home and there was no way I could do both.  I am totally happy with finishing the 5k in 30:28.  Definitely not a great run time for me, but given the circumstances I will take it and be happy with it.  You win some and you lose some.  Keep on trucking (or running in this case) 😉

I was so happy to be in such great company for my run today.  Brittany and Lindsay were both at the run with me.  Brittany and I are pretty much on par for running times and were both severely sleep deprived due to our children today, so we stuck it out together.  Honestly, I love running with a partner.  It just makes it that much better.

Lindsay, is so much faster than me.  She placed in the top 5 out of 363 and won top female.  I aspire to her slow time 😉  She is an inspiration to me.  She sets a time she wants to hit and she makes it.  Every time.  She is competitive and humble at the same time.  I can’t wait to cheer her on again at the next race!

I couldn’t wait to get back home and snuggle my babies today.  Sundays have always been family and food days for me.  Comfort at its best.  I got my strength workout in while they napped and then with one baby in the carrier and the older one helping, we prepped some yummy food for supper.  Roasted cauliflower, sweet potatoes and baked chicken breasts.  We love desserts in this house and nothing tops chocolate.  Chocolate is good any day, any time.  In moderation of course, hehe.

This is the recipe we tried out today, it is actually pretty good.  It reminds me more of fudge than brownies.  Either way, it filled the need for chocolate.  I added two tablespoons of walnut pieces to the top before baking them.  I like texture in my food.  Nuts, seeds, anything with a crunch to it.  They worked out to about 77 calories per brownie if you cut them into 16 portions.  Not bad, no added sugar and lots of healthy fats.

On another note, I would like to say ‘so long January!’.  I am so over you!  lol.  What is it about this month?  Every year I struggle through it.  It’s just kind of blah.  My eating is all over the place, my mood is kind of blah and I just feel tired.  I am welcoming February with open arms ❤  So much more to look forward to this month.  My oldest daughters birthday, Valentine’s Day (which my husband is actually home for this year), date night and I have courses to attend.  I love to be busy ❤ Speaking of which, we started Mommy and Me dance classes yesterday through the East Coast Dance Academy.  So much fun!  I love being able to do fun activities with my girls.  I can’t wait to go again next week.

My Ducks Are Lining Up

Don’t you just love it when a good plan starts to come together ❤  It is the best feeling ever!  I have been searching and searching for the perfect space for our evening and weekend bootcamps.  Somewhere we would have the opportunity to expand into morning classes as well if there was enough demand for them.  We needed a place with a green space, a playground, ample parking and close to a trail or low traffic neighbourhood for running drills.  Well, I found it!  And they are going to let me use it at NO CHARGE!  Seriously, the community we are a part of is pretty amazing.  I am learning that more and more as I dive deeper into all of this.

We moved into this area three years ago and I thought at the time the fitness community was lacking.  Boy was I wrong.  There is so much going on here.  Lots of different styles of classes, running groups, yoga, trail runners, you name it.  It’s here.  And I am only just seeing the tip of the iceberg still.  I can’t wait to get the bootcamp classes started and meet more people.  It is going to be such an awesome year!

I am about halfway through my Fitness Instructor Specialist course.  It is a lot of anatomy and biology right now, which is great because I recently did both of those courses while working on my nursing.  I find it hard to study much while my husband is away, nap time is filled with other chores and by the time the kids are asleep at night my eyes are barely open.  It is much easier to blog or write out bootcamp drills than it is to get through a chapter of anatomy.  It’s interesting, don’t get me wrong, it’s just hard on my eyes.  They want to close.  But I love knowing that I am building a great foundation for my bootcamps and I can’t wait to take other Canfitpro courses this year.

I designed and ordered my flyers and business cards this week.  Pretty exciting!  I can’t wait to share them, I am pretty happy with how they turned out.  I used photographs from previous bootcamps as backgrounds for them.  I hope to put a few of them around at local businesses.  I know everything is online now, but I know some of the local business owners and it can’t hurt, right?!

I hope to have everything posted for registration early next month as I am offering a discounted rate to those who sign up early.  I want to make sure our classes are filled, especially for the first session or two since we are new in the fitness business.

Lots going on for In Fitness And In Health these days.  All pretty exciting stuff for me.  As I said before, this has been my dream for a very long time.

My running is going great, I am doing two 7km runs through the week and one longer run on the weekend.  I am still focusing on strength training until the end of February.  March is going to be kind of a mishmash month of both and at the end of March I start training for a half marathon, so my focus will be on running and getting my speed up a bit.  I got 7km in yesterday in 40 minutes.  That was probably working at about 80% of what I could do.  Not leisurely but not hard either.  I was on the phone with my husband for most of it.  I only get to chat with him a few times a week so I didn’t want to miss our conversation ❤

Bonus.  It’s the little things that drive you crazy when you are running.  Like ear buds slipping out.  Grrrr.  These don’t do that, they are awesome!



The Little Things Are The Big Things; Manifesting Your Goals

I am a busy person because well, frankly, I don’t know how to slow down.  It’s just not something I have learned how to do.  Have I always been like this?  Yep.  Always.  Right from the beginning.  As a kid, as a teen and now as an adult.  I have always just had this energy.  It has taken me years to figure out how to harness some of it and put it to good use.  In my younger years it tended to get me in trouble.  I feel like my thoughts go a mile a minute.  I fall asleep thinking up new ideas and things I can do and I wake up planning the day and my goals for the day.  It drives my husband crazy, I know it does.  But this is me.

The problem is, not everyone is running at my speed and I have to constantly remind myself to slow down and live in the moment.  It’s great to be able to look ahead and manifest my goals but I also need to slow down and soak up the moment while it lasts.  For example, my babies are growing so quickly and somedays I feel like we just run from point A to point B and then it’s nap time or bed time and the day is gone.  Never to be seen again.

I know I will never get these days back so I just have to tell myself somedays that it is ok not to blog, it’s ok to put off studying, it’s ok to not clean the house.  All those things will still be there tomorrow.  Or the next day.  Unchanged.  My babies however will not.  They will be bigger, and smarter and less dependent and less snuggly.  I need to soak up as many snuggles and hugs and kisses as I possibly can in these days.  I need to put down the phone, put down the laptop, leave the dishes in the sink and the floors unswept and just play with my babies.  Just love every bit of them and give them my undivided attention.  That is why I am at home with them after all.  I am fortunate enough to be able to do that financially so I am going to make the most of it.

I get to see every first, take part in every new experience and watch these beautiful babes grow into smart, beautiful girls one day.  And to know that I was able to play a role in helping them become successful and confident women.  It is my job.  It trumps all else.  My fitness, my bootcamps, my business, my blog, my housework.  My babies are always number one and I just have to remind myself of that when I get busy.  It is about balance and finding the right balance.  I want to be successful as an entrepreneur but I want to be successful as a mom first ❤

It’s all the little things that are really the most important.  They are the big things, the most important things to little eyes, ears and especially feelings.  They sense everything and everything affects them in one way or another.

I will reach my goals because by doing so I am also teaching them to never give up.   They are a huge part of the plans and my success, both at home and in business.  We are a team.  Whether they know it or not.

I want to share this video with you because it is so powerful.  To all those moms out there questioning themselves.  Keep going.  They are watching and learning.  Manifest your goals and make them a part of them.


Chocolate Peanut Butter Protein Cookies

These little morsels are delicious, chewy, high in protein and totally hit the spot!

Here is the ingredient list.

1 cup of Chocolate Protein Powder (I use Bio X Chocolate Peanut Swirl, so good)

1/2 cup Natural Peanut Butter

1/2 cup PB2 mixed with 4 tablespoons of almond milk

1 cup Quick Oats

1/4 cup Honey

Mix all the ingredients together in a medium bowl.  Depending on your protein powder you may need to add a little extra almond milk to pull it all together.  Divide mixture into 32 balls and press out to a cookie shape with your hands (or leave them as balls if that is what you prefer) and place them on a cookie sheet in the freezer until firm.  Once firm you can just toss them in a container and keep them in the freezer for a quick fix when needed 🙂

I make 32 cookies out of this recipe and here are the nutrition facts per cookie.

Calories 56

Fat 2.4g

Carbs 5.5g

Protein 3.9g

If you prefer a lower fat version you can use all PB2 (mixed with almond milk).  You may also want to adjust the amount of honey you use depending on how sweet your protein powder is.  Mine is pretty sweet anyway so I really don’t even need the whole 1/4 cup of honey, I could probably reduce it and not notice a difference.

I am no photographer so please excuse the very lame photo of the cookies, they really do look much more appetizing than this, lol.  Oh, and a picture of the Bio X, it is the best protein powder I have tried to date.  So delicious.

Progress Not Perfection

Burrrr it was a cold morning for a run but I managed to bang out 4km. I intended to run 8km today but was freezing after just three so I headed home. I was just doing laps in the neighbourhood this morning as I had a new sitter over with the girls and wanted to make sure they didn’t give her too much trouble 😉. It went very well and we can’t wait to have her back ❤️😊

So, I am almost three weeks in to Hammer and Chisel and love the workouts!! The eating plan however, not loving it. I know my body and I was running a huge calorie deficit. I am never successful long term when I am hungry all the time. I am irritable and cranky and can’t focus. Not fun. By the end of the first week I was already adding calories back in. By the end of the second week I had moved up to the next category. Week three I am doing my own thing. I know what works for me and what doesn’t. I build muscle fast and have to fuel my body properly.

If there is one thing I have learned, it is to listen to my body. When I am hungry. I eat. When I am cranky. I exercise. When I am tired. I sleep. Well that one doesn’t happen all the time with two kiddos but you get the picture 😊 I spent way too much time being hungry in my teenage years trying to stay skinny (and unhealthy) I am not going to let the scale or my jeans dictate how I feel about myself. I feel strong and healthy and my fitness is improving everyday. And that is what matters to me.

I already have much more muscle tone than I did and I love to see that progress 💪❤️ The scale doesn’t tell me everything and so I rely on other indicators such as overall feeling of well being, strength, improvement and how my clothes feel.

I love that I am already doing all of my pull/chin ups unassisted. That’s makes me feel awesome!!! I can’t wait to see how strong I am in 5 more weeks, at the end of the program!

Snow days And Family Time

Snow days seem to be more and more frequent lately.  I love the snow first thing in the morning, when it is quiet and crisp and there isn’t a footprint to be seen.  It is when I actually really like winter.  I am an early morning person and my husband is not.  So it is very rare that I can get him out of bed AND outside first thing in the morning.  He was actually up to plow us out, since we got so much snow.  But we still managed to get him on the trail before 9am, on a Sunday I might add.

We took the sled out for my oldest daughter (Emma) and I take our baby (Scarlett) in the carrier.  It was a little rough going with the sled as we got a lot of snow and it hadn’t been packed down at all by skidoos or four wheelers yet.  But we made it a good distance before heading back to our starting point at the Bike and Bean for some lattes and snacks.  It was such a lovely morning.  Emma kicked off her boots and curled up in the arm chair with her molasses cookie.  I snuggled baby Scarlett and sipped my latte and Daddy enjoyed some steeped tea.  Ok, let’s be real for a minute.  The kids cried and screamed for the first 15 minutes until we got settled into a table, had some baby milk ready and snacks.  But after that it was golden 🙂

We try and get as many family things in as we can while hubby is home.  He has been away a lot this winter and we miss him every day he is gone.  Here’s a few pictures from our adventure that morning.

The Mid January Slump And Snacks To Fight Back!

Here we are on January 19, in the midst of chilly temps, snowy days, early nights and getting less and less outside time due to weather, lack of sunlight or just lack of energy.  They say Monday was the most depressing day of the year.  I believe that.  This week just feels kind of blah.  I have been doing my ‘thing’ getting my workouts in, running and keeping up with my girlies but my oomph just seems to be missing.  Where did it go?  I want it back.  I was forging ahead with great ambition and I seemed to have hit a wall.  I need to find a way to bust through it.  I must just be building steam.  Yeah, that’s it.

Does anyone else get these mid winter blahs?  I want to get outside and shake them off but it has been a bit chilly for my four month old.  I hit the gym today to get in some miles on the treadmill.  It definitely helped, it was one of those days I could have run forever.  It just felt good.  But my girlies were at the daycare and lunchtime was fast approaching.  You don’t mess with a toddlers meal or nap times, lol.

I have been a snack monster these last few days.  So today I spent time making some yummy recipes to help with the cravings and fill the void.  Did I mention that I am a stress eater.  Make that stress eater extraordinaire actually.  I know when it is coming but I still can’t seem to stop it from happening.  I manage it.  I keep healthy snacks and foods within sight and make sure my meals are on pointe.  It usually hits when hubby has been away for an extended period of time or I have deadlines or courses coming up.  Or sometimes just because I put too much pressure on myself.

Anyway, I want to share some of the recipes we put together today.  The waffles are one of my favourites.  I usually eat them with cottage cheese and berries or bananas.  They are pretty delicious.  The two protein bar recipes are new to us.  I just tried them out today and literally just finished sampling them.  They are pretty good.  I mean, it’s no Quest bar, but they hit the spot.  Especially the chocolate chip cookie dough one.  I love chocolate in any form so I tend to make snacks involving chocolate.  The last one is a chocolate chia pudding from the Fixate Cookbook.  I follow the recipe but I put everything in the blender and process until smooth.  Then I refrigerate for a couple hours before eating.  I use 1/4 cup as a serving and add half a scoop of vanilla protein powder and mix before eating.  It is so good and makes an awesome pre workout snack.

I hope you enjoy some of these recipes as much as I do.  I don’t think I will be sad to see January go.  We have lots going on in February and March and then spring is just around the corner 🙂  Yay for that!

Chocolate Chia Pudding With Strawberries
